A. Hide the PodCast Track (via the Track Menu) and the project will export as a 44.1K/16-bit uncompressed AIFF file.

In addition to making sure there is no PodCast track, make sure the "Compress" CheckBox is not ticked in the GarageBand '08 Share dialogBox.
