Q. Can I use the Buttons/knobs/sliders on my Control-Surface/Keyboard/etc, with Apple's GarageBand?

A. Unfortunately, GarageBand uses non-standard Control Codes. The M-Audio iControl is the only control surface that works with GarageBand "Out of the Box." If you know enough about working with MIDI, you might be able to remap your controller's settings using the Codees GarageBand uses.
Roger Wilmut snooped out all the major control codes and posted this list. Thanks to Roger for doing the leg work, and posting his list, and giving me permission to link to it.
